World Food Day
CITAB's Kitchen Lab acts as a space for co-creation between research, territory, and society, developing food solutions that combine health, sustainability, and the enhancement of local resources.

World Food Day 2025, under the theme “Hand in Hand for Better Foods and a Better Future,” challenges us to bring together science, education, and community to transform food systems, promoting healthy and sustainable diets for all. At the University of Trás-os-Montes and Alto Douro (UTAD), through CITAB, we have been working precisely in this spirit of collaboration and innovation.
CITAB's Kitchen Lab acts as a space for co-creation between research, territory, and society, developing food solutions that combine health, sustainability, and the enhancement of local resources. Among the ongoing projects, we highlight the development of olive oil flavored with Judia chestnuts, aimed at promoting cardiovascular health, and bread fortified with whey, in a circular economy strategy that reuses dairy by-products to improve the nutritional value of food.
In partnership with the Primary Health Care Services of Trás-os-Montes and Alto Douro (USF Corgo), Kitchen Lab also participates in an intervention project with obese children, promoting food literacy and healthy habits from an early age.
These initiatives reflect UTAD's commitment to working hand in hand with the community, integrating scientific knowledge and local action for a fairer, healthier, and more harmonious food future for the planet.
